GUM ‘A Field’ Viognier
Layered, fragrant, but never overblown. You’ll pick up fuzzy white peach, tangerine zest, even a hint of Earl Grey tea, all lifted by this lovely saline minerality thanks to those Cambrian soils.

Bandicoot Run ‘Ceramic’ Chardonnay
This wine is fermented in a neutral ceramic egg, which gives it a stunning saline-mineral edge and layered texture. Imagine crisp citrus and green apple mingling with oyster-shell salinity and gentle leesy depth, all while maintaining a laser-focused acidity. It’s textural, electric, and pure.

Blood Moon ‘Autumn Moon Shivers’ Nero D’Avola
Nero makes up about 80% of the blend, with the rest Sagrantino, an unplanned experiment that stuck because it worked so damn well. You’ve got plump sour cherries, raspberries, a lick of balsamic lift, silky tannins, and a clean finish. It’s unfiltered and unfined, rich in personality but not weighty.
