Pirio 2015 Late Disgorged is a beautifully mature Macedon Ranges sparkling, showcasing the power of extended lees ageing. It balances richness and complexity with cool-climate precision. Macedon Ranges’ high altitude and cool climate produce fruit with naturally high acidity; ideal for long-lived sparkling wine. The late disgorgement allows the wine to build layers of brioche, nutty depth and savoury complexity, while still holding onto freshness and drive. It’s a more evolved, gastronomic style of Australian sparkling.

Winemaking / Farming techniques: Traditional method sparkling from hand-picked Chardonnay and Pinot Meunier. Whole-bunch pressed, wild fermented and aged in a mix of tank and older oak before bottling for secondary fermentation. Extended lees ageing (significantly longer than standard release) prior to late disgorgement. Minimal dosage to preserve tension and site expression.
Style / Body: Medium-bodied sparkling; refined, layered and quietly powerful with a fine, persistent bead.
Notes: Lemon curd, preserved citrus and baked apple layered with brioche, almond and subtle honeyed complexity. The palate is creamy yet precise, with fine mousse, saline minerality and a long, savoury finish.
