Location: Landsborough Valley, Pyrenees, Victoria, Australia
Winemaking / Farming Techniques: Sourced from the organically certified Shay's Flat Vineyard, planted in the early 2000s at an altitude of 350 meters. The grapes are handpicked, destemmed, and undergo wild fermentation. The wine is basket pressed and aged for 10 months on fine lees in a combination of stainless steel and old oak. Bottled unfined, unfiltered, with no additives or preservatives.
Style/Body: Medium-bodied with a silky texture and bright acidity.
Notes: Presents aromas of black cherry juice, dried petals, and earthy humus. On the palate, it offers a refreshing profile with green herbal notes, cooling herbs, and a firm raspberry edge. The wine gains depth and weight with time and air exposure.
Descriptors: Black cherry, dried petals, humus, green herbs, raspberry, silky texture.
Pairing Suggestions: This versatile Sangiovese pairs well with charcuterie, game meats, alpine cheeses, and mushroom-based dishes. Its bright acidity and herbal notes complement rich, savoury flavory, making it an excellent choice for hearty meals.
