Location: Adelaide Hills, South Australia
Winemaking / Farming techniques: Hand-picked Pinot Gris, fermented on skins in the traditional ramato style to extract colour, flavour and gentle tannin. Wild fermentation, typically in neutral vessels (tank and/or seasoned oak), with time on skins and lees. Minimal intervention, unfined and unfiltered, low sulphur at bottling.
Style / Body: Light-to-medium bodied, textural and gently skinsy with bright acidity.
Notes: Blood orange, pink grapefruit and pear skin with hints of rose petal, ginger spice and a subtle savoury edge. The palate is juicy yet structured, with a light tannic grip and a dry, refreshing finish.
