Winemaking / Farming techniques: Hand-picked fruit, whole-bunch pressed and wild fermented in a mix of stainless steel and seasoned French oak. Time on lees to build texture, with minimal bâtonnage. Minimal intervention, unfined and unfiltered, with low sulphur at bottling; classic BK precision-meets-lo-fi style.
Style / Body: Light-to-medium bodied, bright and mineral with subtle texture.
Notes: Lemon zest, green apple and white peach with hints of grapefruit pith and flinty reduction. The palate is tight and focused, showing crisp acidity, gentle leesy creaminess and a long, mineral-driven finish.
