Winemaking / Farming techniques: Organically farmed Savagnin grapes, whole-bunch pressed and fermented naturally with indigenous yeasts. The wine is bottled early during fermentation (méthode ancestrale style) to trap natural carbon dioxide, resulting in a gently sparkling, minimal intervention expression. It is unfined and unfiltered with no added sulphites at bottling.
Style / Body: Light-to-medium bodied, gently effervescent with tension and vibrant acidity; a textural, savoury pét-nat.
Notes: Crunchy green apple, lemon zest and lime pith mingle with white stone fruit and citrus blossom. There’s a subtle saline minerality and savoury thread, with a touch of leesy cream and biscuit character from early bottling, finishing crisp and lifted.
