Amber Skye is Defialy’s skin-contact white that celebrates minimal intervention and vibrant Australian fruit, a wine that’s both bold in character and easy to enjoy. Expect orange blossom, spice, texture and freshness all woven into one glass. The blend of Malvasia, Falanghina and Muscat gives Amber Skye a striking aromatic lift and complexity, while the extended skin contact and neutral oak/stainless ageing add texture and depth. Despite its skin-contact pedigree, the wine retains a lively acidity that keeps it balanced and drinkable. It’s a good example of how non-traditional varieties and natural wine practices come together to make something distinctive yet accessible.

Why you'll love me

If you enjoy wines that stand out, aromatic, textured, slightly adventurous, Amber Skye delivers. It has enough complexity to reward multiple sips, but remains fresh and drinkable throughout the bottle. Whether you’re after a dinner companion for herby seafood or a chilled, textured wine for a lazy afternoon, this blends vibrancy, character and more than a little charm.

Location: Heathcote / Central Victoria, Australia
Winemaking / Farming techniques: A blend of 50% Malvasia, 30% Falanghina and 20% Muscat (Muscat of Alexandria or Moscato-type) from Heathcote. Each variety is fermented separately on skins for 2–4 weeks. After skin maceration, wines are aged in a mix of old oak and stainless steel. The wine is wild fermented, unfined, unfiltered and minimally handled; true to Micha’s “hands-off, minimal intervention” ethos.
Style / Body: Medium-bodied, textured and aromatic; an “amber-style” wine with skin-contact depth, yet balanced with bright acidity and lift.
Notes: On the nose: orange blossom, mandarin peel, rose water, spice, exotic floral aromatics and candied citrus.
On the palate: zesty citrus and stone-fruit (think orange, apricot/plum), tropical fruits, a hint of nutty/almond skin-like grip, and a savoury, slightly textured finish.
Descriptors: Orange blossom · Mandarin peel · Rosewater · Candied citrus · Apricot / stone-fruit · Tropical fruit · Nutty-skin · Textured · Savoury · Bright acidity
Pairing Suggestions: Great with dishes that match its aromatic and textured profile, try it with grilled prawns, spiced seafood, Thai-inspired salads, shellfish with citrus, or vegetable dishes with herbs. Also excellent with lightly spiced roast chicken, creamy risottos, or as an aperitif.
