Que Sera, Sera by Defialy is a breezy, bare-bones sparkling wine that captures the freshness of Riesling with a playful frizzante twist. It’s minimal-intervention, fun, and perfect for easy sipping. Rather than aiming for heavy extraction or complexity, this wine embraces simplicity: gentle pressing, stainless-steel fermentation, and a second fermentation to trap subtle bubbles. The “cold fondo”-style carbonation and natural residual sugar lend it a light creamsicle-like softness, while the underlying acidity keeps it crisp and refreshing. It’s a wine that feels alive and slightly “alive in bottle” - ideal for casual, sunny afternoons or casual meals.

Why you'll love me

If you enjoy wines that are light, lively, and drinkable, with a bit of personality but without pretension, Que Sera, Sera hits the spot. It’s not trying to be a serious, weighty white; instead, it delivers bright fruit, fresh acidity, and sparkling energy, all at an easy-drinking pace. It’s perfect for sharing, for summer days, or for pairing with seafood and lighter fare. Its minimal-intervention roots and natural sparkle make it feel honest and grounded.

Location: Macedon Ranges / greater-Victoria region, Australia
Winemaking / Farming techniques: Made from Riesling grapes farmed biodynamically / sustainably. Grapes are cold-soaked, then whole-bunch pressed and fermented in stainless steel. The wine undergoes a secondary (bottle) fermentation to create light bubbles, like a frizzante / pét-nat style. The producer describes it as “cold fondo / frizzante style”; light bead, slightly cloudy, minimal intervention, with no heavy manipulation.
Style / Body: Light-bodied, gently sparkling (frizzante), fresh and textural with lively acidity and a bit of natural, rustic charm.
Notes: Juicy apple, a touch of tropical guava, citrus-pith brightness, fine bubbles, light residual sweetness balanced by acidity, and a clean, slightly textural finish. Some gentle leesy or pét-nat cloudiness gives a soft, inviting mouthfeel.
Descriptors: Green apple · Citrus / lime / lemon-zest · Guava · Sherbet-like lift · Fine sparkle · Light residual sugar · Fresh acidity · Textural · Light-bodied · Refreshing
Pairing Suggestions: Great crisp match for oysters, fresh oysters or sashimi, steamed mussels, ceviche or citrusy seafood; also good as an aperitif. Works with lighter salads, fresh goat-cheese, antipasti, or summer picnic fare.
