Winemaking / Farming Techniques: Dormilona's Chenin Blanc is crafted from organically farmed grapes sourced from the Yungarra vineyard in Yallingup. The grapes are hand-harvested and whole-bunch pressed into various vessels, including Italian amphora, new French oak puncheons, and seasoned barrels. The wine undergoes wild fermentation with regular battonage for three months before being racked to settle and then bottled without additives, fining, or filtration.
Style/Body: Light to medium-bodied with a creamy texture and refreshing acidity.
