Winemaking / Farming techniques: Organically farmed fruit. Hand-picked, whole-bunch pressed, wild fermented. Typically made with a gentle, minimal-intervention approach. Unfined, unfiltered, minimal sulphur at bottling.
Style / Body: Light to medium-bodied, fresh, gently textural, quietly complex.
Notes: Lemon zest, preserved citrus, green apple, subtle beeswax, chamomile, soft herbal notes and a saline, mineral finish. Bright acidity with a rounded, silky mid-palate.
