Winemaking / Farming Techniques: This sparkling rosé is a blend of 38% Pinot Noir (white base wine), 2% Pinot Noir red wine (for color), 30% Chardonnay, and 30% Pinot Meunier. The handpicked grapes are gently whole-bunch pressed and fermented in seasoned French oak barrels using wild yeasts, without added enzymes or nutrients. Fermentation occurs at approximately 15°C to preserve aromatics. After primary fermentation, the wine rests on lees over winter, followed by blending and a second fermentation to develop effervescence. It matures on lees for 30 months before being disgorged without dosage.
Style/Body: Light-bodied and dry, with fine bubbles and a crisp, refreshing acidity.
Notes: This zero-dosage sparkling rosé offers aromas of lemon curd, lemon peel, strawberry gum, and brioche. The palate is nutty, featuring flavors of brioche, Greek yogurt, and ruby grapefruit, complemented by a subtle minerality.
