Indigenous yeast fermentation in stainless steel followed by time resting in French oak (≈ 8 months on lees with ~10% new French oak), giving texture without obscuring purity. Unfined, unfiltered with minimal sulphur at bottling, a gentle, minimal-intervention style.
Style / Body: Dry, medium-bodied and textural, sleek yet layered, balancing freshness with richness.
Notes: Aromas of white peach, nashi pear and subtle hazelnut, with hints of straw and gentle oak spice. The palate is glossy and savoury, showing pear flesh, citrus pith and a whisper of salinity, framed by fine acidity and a soft, lingering texture.
