Winemaking / Farming Techniques: Crafted in collaboration with Mac Forbes, this Cabernet is sourced from an older, north-facing block planted in 1990 on grey-brown sandy loam. The grapes are 100% de-stemmed, naturally fermented for 21 days, then pressed to neutral hogsheads. The wine is bottled unfined and unfiltered to preserve its pure expression
