Morbinos is a lively Adelaide Hills take on textured white winemaking, blending Malvasia Bianca’s bright acidity with the more subtle, layered character of Malvasia Istriana. It’s expressive, fruit-driven and tactile without leaning into muscular orange wine territory. The name Morbinos, a playful take on the idea of “crazy” in the Friulano dialect; reflects the wine’s energetic personality. The Malvasia Bianca brings juicy tropical fruit and racy acidity, while Malvasia Istriana often shows a more introspective, aromatically layered profile that reveals itself with time in the glass. Together they build a wine that’s both immediately engaging and rewarding to explore.

Location: Parish Hill Vineyard, Adelaide Hills, South Australia
Winemaking / Farming Techniques: Hand-picked Malvasia Istriana and Malvasia Bianca grapes are given 4–5 days of skin contact to build texture, then gently pressed and left to age for nine months in seasoned oak with little to no disturbance. After oak maturation, the wine spends about a month in stainless steel before bottling unfined and unfiltered with minimal sulphur. The approach emphasises natural yeast fermentation and minimal intervention to showcase fruit purity and texture without becoming overly oxidative.
Style / Body: Medium-bodied with a rich textural profile balanced by fresh acidity and lifted aromatics.
Notes: Zesty passionfruit and green mango mingle with jasmine florals, white peach and citrus oil. Underneath, hints of exotic spice, lemon curd, nougat and buttery scotch-finger biscuit add depth and intrigue. The palate feels both plush and energetic, with spiced tannin grip and a long, textured finish.
