Location: Yarra Valley, Victoria, Australia (from single-vineyard sources: Tarraford, Sexton, Primavera, Applejack, Bastard Hill)
Winemaking / Farming techniques: Fruit is handpicked and whole-bunch pressed, either directly to barrel or pressed to tank then transferred to French oak puncheons (≈15% new, balance seasoned). Wild fermented, with ~10% of the barrels undergoing malolactic fermentation in 2024. Aged on full lees in a reductive environment with no stirring until blending; bottled under screw cap in November.
Style / Body: Medium-bodied, textured and precise; shows bright acidity, mineral tension, and a long, chalky finish.
Notes: Aromas of confit lemon, gently grilled nuts, struck match, white nectarine, crushed stone and woodsmoke. On the palate there’s citrus pith, white peach, yellow grapefruit, crusted with flint, almond paste and subtle oak spice.
Descriptors: Lemon, white nectarine, flint, almond paste, woodsmoke, confit lemon, struck match, yellow grapefruit, mineral, textured.
Pairing Suggestions: Best enjoyed with seafood (oysters, scallops), creamy chicken dishes, lightly spiced Asian cuisine or pork belly. Also pairs beautifully with mild cheeses and dishes that benefit from a citrus-mineral lift.
