Location: Yarra Valley, Victoria, Australia, blended from their five single-vineyard sites: Tarraford, Sexton, Primavera, Applejack, and Bastard Hill.
Winemaking / Farming techniques: Hand-picked fruit, hand-sorted at the vineyard. Some parcels fermented semi-carbonically with 100% whole bunches; others destemmed and fermented with whole berries. Cold soaks for some batches, warm ferment for whole bunch parcels. Gentle gravity-drain cap management, pressed, then matured in French oak barriques (≈ 15% new) and held on lees. Bottled by gravity without fining or filtration.
Style / Body: Light-medium-bodied Pinot with energy: vibrant red fruit, brisk acidity, nuanced structure, and a texture that’s elegant yet persistent.
Notes: Bright raspberries, strawberries, and cherry dominate. There’s herbal underbrush: sage, perhaps a hint of fennel seed; plus subtle spice like white pepper. Oak influence is gentle: just a touch of new French barrique giving some vanilla and cedar framing. Clean red berry purity with soft, lint-like tannins and a long, fresh finish.
Descriptors: Raspberry, Strawberry, Cherry, Sage, Fennel seed spice, White pepper, Soft cedar, Lint-like tannins, Fresh acidity, Elegant finish
Pairing Suggestions: Great with roast duck breast, grilled salmon, mushroom risotto, or a herby pork loin. Also delicious with charcuterie or mild cheeses. Best enjoyed slightly chilled in warmer weather.
