George’s whole-bunch pressing and organic approach keep it pure and textural.

Winemaking / Farming Techniques:
Organically grown Viognier from Toolleen on pre-Cambrian soils. Whole-cluster pressed and fermented in a mix of stainless steel and seasoned Stockinger oak puncheons.
Style/Body: Medium-bodied with expressive aromatics and a textured palate.
Notes: Bright and fragrant, with layered aromas of Earl Grey tea, white flower, and herbal inflections. The palate reveals fuzzy white peach and tangerine zest, supported by a gently grippy, almost saline finish.
