Bang the Drum is Jayden Ong’s joyful, high-energy take on Gamay from the Yarra Valley. It’s all about immediacy, freshness and drinkability, with just enough structure to keep things interesting. Whole-bunch fermentation gives the wine its lifted aromatics and silky texture, while partial destemming mid-ferment keeps the fruit open and approachable. The result is a Gamay that’s bright and expressive up front, but with a bit of depth and savoury complexity underneath; a classic “drink now but think about it if you want to” style.

Location: Yarra Valley, Victoria, Australia
Winemaking / Farming techniques: 100% Gamay, predominantly whole-bunch fermented to build aromatic lift and structure, then partially destemmed mid-ferment to balance freshness and fruit. Wild fermentation, minimal intervention, unfiltered,very much in the Moonlit Forest “lo-fi but precise” style.
Style / Body: Light-to-medium bodied, vibrant, energetic and fruit-forward with fine structure.
Notes: Red cherry, raspberry and cranberry jump out first, followed by subtle spice, floral lift and a touch of savoury charcuterie. The palate is juicy and vivid with fine tannins, bright acidity and a clean, moreish finish.
