Winemaking / Farming techniques: Sustainably farmed Pinot Gris, hand-harvested. Fermented on skins for a short period to extract colour, flavour and gentle phenolics (ramato style), then pressed and finished in neutral vessels. Wild fermentation, minimal intervention, unfined and unfiltered, minimal sulphur at bottling.
Style / Body: Light to medium-bodied, textural, fresh, gently skinsy.
Notes: Pink grapefruit, blood orange, pear skin, rose petal, subtle spice and a light tannic grip. Bright acidity carries a juicy palate with a dry, refreshing finish.
