VS&B approaches Nebbiolo with a balance of respect for tradition and an understanding of Australian site expression. Grown in Beechworth’s elevated vineyards and granite-rich soils, the fruit develops the variety’s classic perfume and structure while retaining freshness through the region’s cool nights. Farming is low-intervention and detail-oriented, with careful canopy management helping achieve even ripening for this notoriously demanding grape. In the winery, extraction is kept measured to manage Nebbiolo’s naturally firm tannins, before maturation in older oak to soften edges without masking varietal character. The wine opens with rose petal, sour cherry, and dried herbs, finishing with fine tannins and a mineral edge that reflects both the site and the thoughtful restraint of the winemaking.

Winemaking / Farming techniques: Sustainably grown Marsanne, hand-picked and whole-bunch pressed. Wild fermentation in stainless steel with a portion matured in old oak for texture. Minimal intervention, no fining, and only a light filtration to keep things bright.
