Location: Sunbury, Victoria, Australia (fruit grown in Sunbury)
Winemaking / Farming techniques: Hand-picked; 100% de-stemmed. Slow basket press over 4 days. Wild fermentation. Aged for 12 months on full solids in stainless steel. No sulphur or additives (none at any stage), unfined and unfiltered.
Style / Body: Medium-to-full bodied; savoury, textural, and rich, with lo-fi character and slightly oxidative complexity.
Notes: Aroma of honey suckle and pickled apricots, golden apple, pineapple, with lemony lift. Flavours lean into savoury textures, slight funk, juicy fruit richness with a hint of rustic grip.
