Winemaking / Farming techniques: Hand-picked Pinot Gris with extended skin contact (ramato style) to build colour, flavour and phenolic texture. Wild fermentation, often in a mix of tank and old oak, with time on skins and lees. Minimal intervention, unfined and unfiltered, with restrained sulphur at bottling.
Style / Body: Medium-bodied, textural and savoury, sitting between a white and light skin-contact wine.
Notes: Nashi pear, quince and citrus peel with hints of ginger spice, rose petal and a subtle earthy edge. The palate is layered and gently grippy, with a savoury, slightly nutty finish and bright underlying acidity.
