Location: Adelaide Hills, South Australia
Winemaking / Farming Techniques: Made using the ancestral method (pétillant naturel), with hand-harvested Chardonnay fermented using native yeasts. Bottled before fermentation
finishes to create natural bubbles. Minimal intervention, no fining or filtration, and little to no added sulphur.
Style/Body: Light-bodied, crisp, and naturally sparkling with a cloudy, unfiltered appearance and lively acidity.
Notes: A fresh and textural pét-nat that showcases Chardonnay’s bright citrus and stone fruit notes, complemented by a yeasty, slightly wild complexity. Refreshing and energetic with a fun, easy-drinking style.
Descriptors: Lemon zest, green apple, white peach, pear, chamomile, brioche, and a hint of sea spray.
