Location: Cebreros, Sierra de Gredos, Castilla y León, Spain; from vineyards at 700–800 m elevation, planted over 60 years ago on granitic sandy soils.
Winemaking / Farming Techniques: Hand-harvested in 20–25 kg boxes, grapes are refrigerated to 0 °C before destemming. The wine undergoes skin contact maceration (up to 36 hours), spontaneous fermentation in concrete tanks, and ages on lees for 8 months in large wooden vats. Minimal intervention, organic viticulture.
Style/Body: Medium-bodied with a textured, slightly waxy mouthfeel and a balanced, elegant structure.
