Gentle extraction to maintain finesse, followed by ageing in seasoned oak to soften tannins while preserving purity. Minimal intervention, unfined and unfiltered with restrained sulphur use.
Style / Body: Medium-bodied, structured and savoury with high acidity and firm tannins.
