Location: Mount Gambie, Limestone Coast, South Australia Winemaking / Farming techniques: Organically grown Riesling, wild-yeast fermented, bottled before full fermentation to capture natural carbonation (méthode ancestrale style). Very low residual sugar, minimal intervention, tiny bubbles, direct from vineyard to crown cap.
Style / Body: Light-bodied with vivid acidity and fine, persistent bubbles; bright, precise, and energetic rather than heavy or foamy.
Notes: Bright lemon and yellow grapefruit zest, green apple peel, jasmine-white florals, hints of wet stone and saline minerality. The palate is crisp, with pulpy texture from lees or sediment, finishing with a whip-crack of acid and clean dryness.
