Location: Mornington Peninsula, Victoria, Australia
Winemaking / Farming Techniques: Biodynamically grown Pinot Noir (MV6, D5V12, Pommard clones) sourced from sandy loam soils. Minimal intervention: indigenous yeast fermentation, balanced use of whole berries and light whole bunch, aged in premium oak. Light vegan fining and Diam closure ensure freshness and expression of terroir. Style/Body: Medium-bodied, elegantly structured, with crystalline purity and vibrant energy. Silky and refined, yet with supportive texture.
Notes: Bright and lifted aromatically; violet florals, red cherry, raspberry, red currant and pomegranate, with lifted rhubarb, thyme, clove/allspice and a touch of orange peel. The palate is fresh with precision: juicy red fruits framed by firm acid, polished tannins, herbal-tinged earthiness and a long, elegant finish.
Descriptors: Violet, cherry, raspberry, pomegranate, rhubarb, thyme, clove, orange peel, herbal-earth note, bright acidity, polished tannins, elegant, textured.
Pairing Suggestions: Pairs beautifully with grilled salmon, duck breast with cherry gastrique, mushroom risotto, or aged Gruyère. Equally lovely on its own; decant briefly or enjoy lightly chilled as a summer evening go-to.
